INGREDIENTS:
1 Cup mango puree
1/2 cup cream
1 tbsp. gelatin
1/2 cup chocolate sauce
1/2 cup pista sauce
2tbsp sugarTo prepare chocolate sauce: Mix 2-tbsp. cocoa with 1/2 cup of milk. Add 1-tsp cornflour and 2-tbsp sugar. Boil till thick. Allow to cool.
To prepare pista sauce: Grind 20 pista and blend with 2-tbsp. sugar.
METHOD: Dissolve gelatin in fi cup of warm water. Allow to cool. Add cream, mango puree and sugar. Mix well.
Keep in freezer till it solidifies. Spread chocolate sauce in a bowl. Pour chocolate sauce and pista sauce over it and serve.
Preparation time: 1/2 hours.
Serves 2 persons
Ingredients:
1 tbsp. cornflour
2 tbsp. sugar
2 tbsp. honey
1 tbsp. lemon juice
1 cup milk
1 cup mixed fruits
1/2 cup mixed fruit juice
1/2 packet jelly crystals
1/2 cup cream.Method: Dissolve cornflour in milk. Add honey, lemon juice and sugar. Boil till thick. Cool.
Add fruit juices, mixed fruits, cream and jelly cubes to it. Allow to freeze.
Serve in cups. Pour honey and decorate with finely cut orange flanks.
Cooking time: 60 minutes.
Serves 2-3 persons.
Ingredients:
2 cups mixed fruits (finely cut)
1 cup maida (flour)
1 tbsp. Butter
4 tbsp. Ground sugar
1/2 tsp. Baking powder
1/2 cup milk
1/2 cup cream
Method: Put the mixed fruit in a baking dish. Knead soft dough with maida adding baking powder, butter, sugar and milk.
Make fi cm thick rounds of dough and place them in the baking dish over the fruits.
Bake in oven for fi hour or till the cobblers are cooked. Allow to cool. Pour the cream over them and serve.
Cooking time: 45 minutes
Serves 2-3 persons.
Ingredients:
1 egg
1/2 cup oil
1 tsp. Lemon juice
1/2 cup cream
1-cup mango cubes
1 cup cut grapes
1/2 cup mango juice
2-tbsp. ground sugar.
Method: Blend egg with oil and lemon juice in mixie till creamy. Add cream and sugar. Blend again.
Add finely cut fruits and orange juice to the sweet mayonnaise. Put in cups. Chill in the freezer.
Preparation time: 15 minutes.
Serves 2-3 persons.
Ingredients:
4 ripe bananas
2 tbsp. sugar
1/2 cup cream
2 tbsp. Gelatin
For the plum sauce:
100 gm plums
2 tbsp. Cream
1 tbsp. Ground sugar
Method: Dissolve gelatin in 2-tbsp. warm water. Dissolve sugar and chill. Mix with well-beaten cream and mashed bananas. Put in a mould and keep in the freezer till set.
Serve with plum sauce.
To make plum sauce: Blend the plums in mixie. Add cream and sugar.
Preparation time: 45 minutes
Serves 3-4 persons.
Ingredients:
2 oranges
1/2 cup mixed dry fruits (chopped)
2 eggs
2-tbsp ground sugar
Vanilla ice-cream
Method: squeeze out the juice of half-orange. Peel and make segments of one and half oranges. Beat egg whites with sugar till frothy. Add orange juice and beat well. Add orange segments and ice cream.
Serve the ice cream in bowls along with dry fruits. Decorate with orange segments. Chill and serve.
Preparation time: 20 minutes

BUTTER SCOTCH KULFI (RASPBERRY)
Ingredients:
1 liter milk
500 gm raspberry
2-tsp of flour
100 gm cream
20 raisins
100 gm sugar syrup
Method: Boil the milk, reduce its quantity to half. Add sugar, flour and cream. Stir boil until thick. Remove from fire. Allow to cool.
Wash the raspberries squeeze out the pulp and strain it. Add the raspberry pulp and raisins to the thickened milk and mix well. Take the mixture in a flat steel vessel or in an earthen pot and place in the freezer for 8 to 9 hours.
Cooking time: 30-35 minutes
Serves 2-4 persons.
Ingredients:
1 cup sugar
1/2 tbsp. corn starch
2 eggs
1 cup fresh pineapple juice
1 cup cream
2 apples
2 chikoos
1/2 cup pineapple (small pieces)
1 orange.
Method: Take a saucepan. Beat eggs well. Add pineapple juice, sugar and cornstarch. Place over the fire and boil till it thickens. Allow to cool. Put in the freezer for some time.
Add cream and pour over the fruit salad.
Cooking time: 25 minutes.
Serves 2 persons.
Ingredients:
1 packet jelly crystals
1/2 cup fresh curd
1/2 cup fresh pomegranate juice
1 tbsp. Organo
1 tbsp. lime emulsion
1 cup fresh fruits (chopped)
1 tbsp. castor sugar
To garnish:
Fresh fruits
Method: Prepare jelly. Keep it in the fridge for 5 minutes. Churn the curd and add into it. Also, add pomegranate juice, Organo, lime emulsion and 1 tbsp. of sugar (castor)
Take out jelly from the fridge. Keep aside till it reaches room temperature. Add curd and mix well. Pour it over jelly and place in the freezer. Take out after about half an hour.
Serve with freshly chopped fruits.
Cooking time: 10 minutes

Ingredients:
3 big guavas (pink variety)
1 cup low fat fresh yogurt
2 tbsp. Sugar
1 tbsp. Gelatin
2 tbsp. Hot water
2 egg whites
Method: Cut guavas into small pieces. Boil in a little water. Cool and mash well. Sieve and collect puree, discarding seeds. Add sugar to the puree and mix with beaten yogurt. Beat briskly.
Dissolve gelatin in hot water and add to the fruit mixture. Keep aside until the mixture begins to set. Whisk egg whites until stiff and add to the fruit mixture. Pour into a mould and chill until set.
Cooking time: 30-35 minutes

Ingredients:
1 litre skimmed milk
1 tbsp. Sugar
4 cardamoms (powder)
1 banana
1 orange
1 apple
1 mango
2 chikoos
1 guava
1/2-cup pineapple pieces
1/2-kg grapes or 1/4 cup raisins or 1/2-kg cherries or any other seasonal fruit
Method: add 1 tbsp. sugar and cardamom powder to the milk and boil until thick. Cool and chill. Add finely cut fruits. Sprinkle 1 tbsp. sugar, mix well and keep in the refrigerator.
Cooking time: 40 minutes

2 cups orange juice
1/2 cup skimmed milk
12 tsp. Lemon juice
2 tbsp. sugar
3 tbsp. Cornstarch
1/4 tsp. salt
1 egg
Cherries to garnish
Method: Take sugar, cornstarch and salt in a heavy vessel. Stir in milk, lemon juice and orange juice. Place the vessel on moderate heat. Slowly bring the liquid to a simmer, stirring constantly until thick.
Have a beaten egg ready in a big bowl. Slowly pour the thick mixture over the egg, while beating it vigorously with the eggbeater. Take the mixture back to the vessel and keep over fire. Stir constantly.
Do not allow it to boil. Remove from the fire. Pour the pudding into the individual dessert bowls. Cool, and then chill well. Decorate with cherries and serve.

Ingredients:
2 egg whites
1 and 1/2 cups mashed bananas
1/4 cup sugar
3 tbsp. Lime juice
2 tbsp. Gelatin (powdered)
For the custard sauce:
2 eggs (yolk)
1 cup skimmed milk
2 tbsp. Sugar
Vanilla essence
Method: Beat egg whites until stiff and dry. Add sugar and beat well. Dissolve gelatin in 2 tbsp. of hot water. Add to egg whites. Mix the mashed bananas and lime juice. Chill and serve with soft custard sauce.
To prepare custard sauce: Beat yolk of the eggs lightly with fork and add sugar. Add milk, slowly stirring constantly.
Cook and stir on slow fire until the mixture thickens. Add vanilla essence. Allow to cool and put in the freezer.
